Why is the oil settling at the top of the peanut butter?

Our peanut butter consists of 100% peanuts, since no substances are used to bind it, the oil quickly separates from the solid mass. This ensures that there is a layer of liquid on top. However, since this is the valuable fat from the nuts, simply stir vigorously and do not tip away. If you mix it properly, your peanut butter will have the usual consistency again.
